Friday Food and Favorites: Orange Soup (aka Leftovers Soup) and other Original Ideas For Orange

I'm usually not a fan of the color orange, but I came up with this genius idea for a "leftovers soup" that I just had to share with you all, and with the soup being this rich golden orange color, the idea for this post was born.

Now I know I am probably not the first one who came up with the idea of a leftovers soup, but I was pretty tickled with how fabulous the results were, and even more thrilled that I didn't have to throw out pans of perfectly good food.

Here are the leftovers that I had: Roasted butternut squash, zucchini in tomato sauce, couscous, and chicken soup with matzo balls. I sauteed some onions and dumped all the leftover ingredients into the pot besides for the matzo balls. I then added more water and some more salt, pepper and garlic powder and simmered for 1/2 hour. Then I immersion blended the whole thing and dropped in the matzo balls. YUM! My family polished off the entire soup right away!
