Friday Food and Favorites: Easy Soup Cheat and Cheetah

Time to cheer up, it's Friday!

So how's that weather out there? If you're in the Northern part of the USA you're probably snowed in, and it's the perfect time to enjoy the coziness of home. Embrace the opportunity for nesting, and nurturing your inner homebody. And the aroma of a homemade pot of thick, healthy, delicious soup can chase away that cabin fever in the blink of an eye.

I happen to not be a fan of spending hours in the kitchen, so yesterday, when I was craving some healthy, warm, comfort food, but I didn't want to work all that hard, I decided to make up a cheat veggie soup recipe.

Here's what I did:

1. Place the scrubbed whole veggies into a pot with the lentils and add water.
2. Add the spices.
3. Simmer for 2 hours
4. Blend with an immersion blender

That's it!

No peeling or chopping necessary, and you have all the healthy fiber and nutrients from the peel in each yummy, soothing spoonful.

Ingredient list:

1 large or 2 medium sweet potatoes
1 large or 2 medium zucchinis
1 large or 2 medium onions
1 large or 2 medium tomatoes
1 cup of lentils
Generous dashes  of salt, pepper, garlic powder. Optional: ginger, sage, turmeric, basil to taste

Tip: Sprinkle some mozzarella cheese on top for a complete and hearty meal.

Now let's talk about Cheetah!

Cheetah print is the bold cousin (and sometimes interchanged with) leopard print. There's something about the irregular spots that just brings out the Rawwr in us women, and it's such an easy way to up your chic factor while adding a bit of drama. Need a boost in energy?     I think this cheat soup is a fabulous idea. I too have not wanted to spend too much time in the kitchen, though being a teacher, I've been off for two weeks now! The difference that eating like this makes is part of keeping up that glow on our complexions and spring in our healthy steps....thank you!

    Now for the cheetah; I LOVE IT! Oh how marvelous it is to play with the possibilities of animal prints in winter or summer!

  5. YUm! I love leopard and cheetah! I made a lebanese swiss chard and lemon soup the other day.. I was craving something simple and veggie too.. this soup recipe looks great! I love the spices you added too! Will try that this weekend!
